This is the most delicious sourdough french toast. And it couldn’t be easier. Mix it up the night before you want to bake it and it feeds a crowd in the morning. The layers of cinnamon sugar the optional crumb topping – oh goodness, this is a favorite recipe. I know you’re going to love this perfect sourdough breakfast!

Important Ingredients

  • Crusty Sourdough Bread – I use a loaf of bread from my favorite sourdough artisan bread recipe. The loaf needs to be a day old for best results, and cut into 1-inch cubes.
  • Unsalted Butter – I prefer baking with unsalted butter so that I can control the amount of salt in my recipes better.
  • Brown Sugar – You can use either light or dark brown sugar. It is used in both the filling and optional streusel topping.
  • Granulated Sugar – Sugar helps balance the flavors in this recipe and enhance the sweetness.
  • Cinnamon –Cinnamon makes the filling so delicious. It is also used in the streusel topping.
  • Salt – Including salt balances and enhances flavor.
  • Eggs – This recipe uses 5 large eggs for the egg mixture.
  • Heavy Cream and Milk – A combination of heavy cream and whole milk soak into the bread overnight and make it soft and delicious. If you are worried about it becoming soggy, or if you are planning to leave it longer than overnight, decrease the amount of milk.
  • Vanilla Extract – I love how the vanilla combines with the cinnamon and sugar to create the perfect french toast flavor.
  • All-Purpose Flour – I use flour in the streusel topping to help with the consistency of the topping.
  • Chopped Pecans – These are optional for the streusel topping, but so delicious!

How to Make Sourdough French Toast Casserole

Prepare Casserole

The night before baking, cut day-old crusty sourdough bread into 1-inch cubes. Spread half of the bread in the bottom of a 10-12 inch skillet (or 9 by 13 inch baking dish).

Prepare the filling by mixing together softened butter with brown sugar, ground cinnamon and salt. Dollop most of the cinnamon sugar mixture over the cubed bread. Add the rest of the bread on top and dollop with the remaining cinnamon sugar mixture.

Prepare the egg mixture by whisking together eggs, heavy cream, milk, granulated sugar, vanilla extract and salt. Pour over the cubed bread.

Cover the french toast with plastic wrap and stick in the refrigerator for up to 8-10 hours.

Streusel Topping

Before baking your sourdough french toast casserole, you can add an optional (but super delicious!) streusel topping. To prepare the topping, mix together brown sugar, all-purpose flour, unsalted butter, cinnamon and optional chopped pecans. Sprinkle the crumb topping over the top of the french toast casserole, right before baking.

Bake

After allowing the french toast sourdough casserole to soak overnight for 8-10 hours, bake in the oven at 350ºF for 40 minutes until bubbly and baked through. Serve warm and enjoy!

Amy’s Recipe Tip

If you like a more custardy texture to your french toast casserole, add an extra egg and another 1/4 cup milk to the liquid ingredients. I like the texture of the ratio of bread to liquid in the recipe and don’t find it soggy. If you find it too “soggy” reduce the milk to 1/2 cup.

Substitutions

  • Sourdough Bread: I love making this recipe with traditional crusty sourdough bread but it would also taste delicious with brioche or a regular sourdough sandwich loaf. Just make sure to dry out the bread before using it.
  • Cream Cheese: If you love the flavor of cream cheese, this recipe tastes extra delicious with some dollops of cream cheese (about 2-4 oz) spread throughout the bread before pouring on the milk/cream mixture.
  • Cinnamon Sugar Filling: If you prefer a less sweet french toast casserole, leave the cinnamon sugar filling out. Top your french toast casserole with maple syrup or powdered sugar if desired.
  • Streusel Topping: I love the texture the streusel topping brings to the sourdough french toast casserole. My kids begged me to leave it in this recipe because they love it, but it’s also just as delicious without. Do what works for you!

How to Store Leftovers

Leftover sourdough french toast casserole can be moved to a container and refrigerated for a couple of days. Reheat and enjoy.

Frequently Asked Questions

Does this french toast get soggy?

I love the variety of texture in this french toast casserole. If you let it soak too long it can get soggy, but the crumb topping and sourdough bread help balance those textural flavors. If you’re worried about soggy bread, decrease the milk to 1/2 cup instead of 1 cup in the recipe.

I don’t have a skillet. What pan should I use?

This works great in a 9 by 13 pan too!

Can I use bread from the grocery store for this recipe?

You can. Just be aware that the custard in this recipe is made specifically for a heartier bread. If you choose a bread that is softer it will soak up a lot more of the custard and can taste more soggy. Only let the mixture soak an hour or two before baking.

Ingredients 

Sourdough Bread

  • 500-600 grams crusty sourdough bread, 1 inch chunks, about 1/2 loaf

Cinnamon Sugar Filling

  • 55 grams unsalted butter, 1/4 cup, softened
  • 150 grams brown sugar, about 3/4 cup
  • 7 grams ground cinnamon, 1 Tablespoon
  • 2 grams salt, 1/4 teaspoon

Egg Mixture

  • 5 large eggs, 250 grams
  • 180 grams heavy cream, 3/4 cup
  • 240 grams whole milk, 1 cup, see recipe notes
  • 75 grams granulated sugar, 1/3 cup
  • 4 grams vanilla extract, 1 teaspoon
  • 3 grams salt, 1/2 teaspoon

Streusel Topping (Optional)

  • 75 grams brown sugar, about 1/3 cup
  • 55 grams all-purpose flour, about 1/3 cup
  • 45 grams unsalted butter, 3 Tablespoons
  • 4 grams ground cinnamon, about 2 teaspoons
  • 50 grams chopped pecans, if desired, about 1/2 cup

Instructions 

  • The night before baking, cube day-old, crusty sourdough bread into 1 inch chunks. Set aside.
  • Mix together softened butter with brown sugar, ground cinnamon and salt. Spread half of the bread in the bottom of a 10-12 inch skillet (or 9 by 13 inch baking dish).   • Pre-heat the oven to 350ºF. Place the casserole in the oven and bake for 40 minutes until bubbly and baked through. Serve warm and enjoy!

Notes

Directions for no overnight soak: You can make this recipe without the overnight option. Assemble the french toast casserole. Let it sit for 1-2 hours and then bake. I don’t recommend soaking for much longer than 12 hours unless you like a very custardy, bread-pudding like french toast.
Bread: Fresh bread can be used but will result in a more “custardy” french toast. If you only have fresh bread you can toast your bread cubes in the oven until dried out. Let them cool and then use in the recipe.

    This is gonna be delicious. I made a double batch. However, it is not true to say “This couldn’t bee easier”. 3 different ingredient list for 3 different steps. It could be easier.

    I made your cinnamon brown sugar sourdough. Do you think I can use that for this recipe and should i adjust the sugar and cinnamon amounts since the bread already has some in it?

      Sorry I’m just now seeing this question. You can use any bread you prefer. I would probably reduce the sugar crumble topping a little bit if you do use a sweeter sourdough in the casserole.
