Frequently Asked Questions
Typically I add inclusions during the kneading or strengthening process of the dough. This is typically during the second set of stretch and folds or I laminate them in right before shaping my dough. In this article, I detail how I add inclusions to my sourdough.
I love cheese, like this Three Cheese Sourdough Bread that is incredible. And sometimes going with some simple lemon zest and herbs or everything bagel seasoning really elevate a loaf. Roasted garlic and rosemary is also one of my favorite savory additions.
Chocolate of course! Ha – have you tried my chocolate sourdough loaf? It’s incredible. I also love a good cinnamon raisin sourdough loaf, my slightly sweet maple pecan loaf or my sourdough gingerbread bread during the holidays.

I made your discard cinnamon rolls and they are THE best. So easy to make & so very flavorful, so great for special occasions!
Thanks for sharing your recipe!
Thanks for the review! I’m glad they turned out great.
I found your book at Barnes and Noble. There were several books on the same subject; however, your book seemed to be the most straightforward and teachable. I bought my starter from King Arthur and followed your instructions. I think my house was a little too cool for the starter to really take off. At that point I purchased a Cozy Bread proofing mat. this was a game changer. My first loaf was the “Easy Crusty Sourdough”. It came out OK, but I realized there could be some improvements. My second loaf was the “Sourdough Artisan Bread”. This loaf was much better. My next loaf is going to be the “Potato Flake Sourdough”. Thank you so much for “The Beginner’s Guide to Sourdough”.
Thanks so much for your review! I’m glad you came across the book and found it helpful. Welcome to the world of sourdough!
